Jack's
Quesadillas
Kay-sah-dee-ya!
Ingredients
• 8 large flour tortillas
• 2 cups pepper jack cheese, shredded -- if you can't
find pepper jack use plain monterey jack
• 1 cup black beans, rinsed and drained
• 1 cup tomatoes, chopped and drained
• 1/2 cup chopped green onion
• salt and pepper
Directions
Preheat oven to 375 degrees and prepare a sheet pan lined with
foil.
Lay 4 of
the tortillas down on the sheet pan. Divide one cup of the cheese
among all 4 of the tortillas. Divide the black beans, tomatoes
and green onions in the same way. Salt and pepper each one lightly.
Top each tortilla with the remaining cheese and finish by topping
each one with a tortilla. Press down lightly on each quesadilla.
Bake them
for 10-14 minutes. Let cool for about 5 mintues.
Cut each quesadilla into quarters and serve with guacamole,
sour cream and/or salsa!

• Fresh mozzarella, tomatoes and fresh basil
• Grilled chicken, mushrooms and cheddar
• Broccoli, sun dried tomatoes and Gorgonzola cheese
