Heavenly Pavlova Cake paired with Canadian Icewine
4 egg whites
1 cup sugar
1 teaspoon vinegar
2 teaspoons cold water
1 teaspoon vanilla a pinch of salt

Beat egg whites until stiff -- add cold water slowly while beating. Beat in half the sugar -- then fold in second half of sugar along with the vanilla and vinegar.
Line cookie sheet or cooking tray with greased parchment paper. Pour mixture into center of tray spreading it onto the paper until it is 9-10 inches in diameter. Parchment paper is best, although using well-greased foil will also work. Bake at 325 degrees F for 20 minutes -- then turn oven off and continue baking for one hour. Allow it to cool.Pile whipped cream on top and decorate with sliced kiwi fruit, strawberries or assorted fresh fruits. Another option is, when cold, spread cake with raspberry jam or a thick lemon custard prior to topping with whipped cream.
