European Tomato Salad paired with
Sauvignon Blanc
One visit to Italy and you will have access to simple, elegant and inspiring tomato dishes. Here is a variation of a classic tomato salad. Using avocado oil brings an intriguing buttery/nutty flavor to this dish.

Ingredients:
-vine ripened tomatoes
-basalmic vinegar (from Modena preferably)
-avocado or olive oil (use a very good quality oil)
-fresh mozzarella
-dried sweet basil
-salt and pepper

Slice tomatoes 1/4 inch thick and place on plate. Salt and pepper to taste. Slice fresh mozzarella 1/8 inch thick and place on top of each tomato. Drizzle vinegar, then oil. Then sprinkle dried sweet basil on top. Allow to marinate for a few minutes and serve.
